Ingredients

  • 4 chicken breasts , trimmed
  • 8 sliced bread of choice (we used brown)
  • 2 feta 
  • 2 onion 
  • 2 soaked cranberries
  • 2 cherry peppers diced
  • 2 chives 
  • pinch dried rosemary 
  • 2 eggs 
  • 2 crushed crushed garlic

 

Method

  1. Trim chicken breast. Butterfly them and beat with mallet to even square shape and season  
  2. Place ¼ of the filling in the center of breast  in a thin line . roll into a cylindrical shape in glad wrap. Tie knots on either side so its water tight.
  3. Boil in a shallow pan with water in for 10 mins, remove glad wrap and brown in butter. Serve with a fresh garden salad.
